• 2015 Vin Santo – Trebbiano, Crepolino & Malvasia grapes are hand picked and laid out on straw mats for three to four weeks. The grapes slowly dehydrate, increasing the sugar level of the fruit. After crushing and fermentation are complete the wine is kept in small 60 litre oak barrels called ‘caratelli’ for five years. True to Tuscan tradition this dessert wine is best enjoyed with a cantuccio biscotto.
• 2019 Goose Block Frizzante – Named after the infamous geese walking through the Trebbiano vines adjacent to the Cellar Door every morning and selecting the ripest fruit to eat their leisure. Frizzante means “Gently Sparkling” and we have achieved this with partial fermentation in bottle, with limited intervention, leaving a slight harmless deposit of yeast. Notes of Nashi pear, mandarin, and apple crumble – enjoy with friends as an aperitif.
• 2020 Early Harvest Yarra Valley Frantoio Olive Oil – Stefani Estate prefers to early harvest olives when colour ratio is 60% green to 40% black in colour. This produces an oil of low extraction in quantity but higher in polyphenols and antioxidants which increases shelf life of the oil.
