Trebbiano, Crepolino & Malvasia grapes are hand picked and laid out on straw mats for three to four weeks. The grapes slowly dehydrate, increasing the sugar level of the fruit. After crushing and fermentation are complete the wine is kept in small 60 litre oak barrels called ‘caratelli’ for five years. True to Tuscan tradition this dessert wine is best enjoyed with a cantuccio biscotto.
